Super Easy Banana Loaf Cake


Is it 2020 again? It felt like it when I was baking a banana loaf cake recently but I had bananas past their best I needed to use up and sticking them in a cake is always the easiest solution. 

Plus it tastes scrummy too! 

I make most of my bakes in my Thermomix so I use a mixture of already programmed Thermomix recipes and my own favourites then adapt them to use in the machine. It's so easy to use - you just measure everything out, stick it in the mixing bowl and it does it all for you. It makes life so much easier when I have both the children around my ankles and I want to whip up a cake quickly. 


I used just a simple Banana Bread recipe from the Cookidoo app which I'll share below, it can be adapted to any mixing bowl so you don't have to have a Thermomix to try it! 

Ingredients:
130g unsalted butter
340g bananas
140g caster sugar
2 large eggs
225g plain flour
2 tsp baking powder
1 pinch salt 
1 tsp bicarbonate of soda 
100g buttermilk (although I used oat and it was fine)
1 tsp vanilla extract

Method:
  • Preheat oven to 180 degrees and pop some baking paper in a loaf tin
  • Place butter, bananas, sugar, eggs, flour, baking powder, salt, bicarb, buttermilk and vanilla extract into the mixing bowl, then mix (20 sec/speed 5 or mix by hand).
  • Transfer to the prepared tin and bake for 50-60 mins until a skewer in the centre comes out clean.
  • Cool in the tin for 30 minutes before resting on a wire rack.


As you can see, the recipe is super easy to create and fail-safe meaning you are left with a deliciously perfect banana loaf cake every time.
