It's the season to be merry and I can confirm you'll be positively merry after sipping one of my Baileys & Rum Espresso Martini. I'm a huge fan of Espresso Martinis but the thing I love the most is that you can adapt them with so many other ingredients. I used Kraken Rum to add a little warmth to the drink, perfect for those cold December evenings.
You'll need:
35ml espresso (why not use a local roaster, I used Mettricks Coffee)
35ml Kahlua
35ml Baileys Irish Cream Liquor
15ml Kraken Rum
A couple drops of vanilla extract
Pinch of rock salt
Pinch of cinnamon
Coffee beans to garnish
Measure everything out into a cocktail shaker, add ice, shake vigorously then strain into glasses.
Dust on some cinnamon or chocolate powder and garnish with coffee beans - I used @mettricks coffee beans!
