Super Easy Christmas Pudding Tiffin Balls


With activities at home taking centre stage this year I thought I'd get my thinking cap on and come up with some festive bakes that are super easy to make at home whether you're a seasoned pro or just dabble in baking like myself. 

Christmas Pudding Tiffin Balls are one of my favourite things to make at this time of year as they're so easy to do plus most people already have the ingredients in their cupboards and if you don't, they're really cheap to pick up. Tiffin Balls also make great gifts - just pop them in a bag, tie with some twine and add a tag and you have a delicious homemade gift. 

It's a recipe our son loves making with us too so it's perfect if you want to get the children involved as there is minimum mess and no risk of flour being thrown everywhere!



I made my own tiffin balls in my Thermomix but you can use a mixing bowl and get the same results, it'll just take a little extra arm work to crush the digestives and get the mixture ready. The Thermomix also melts everything but I'll add in how to melt without this below.

What you'll need:
  • 250g digestive biscuits 
  • 100g dark chocolate chips
  • 100g unsalted butter (or plant-based alternative)
  • 2 tbsp golden syrup 
  • 50g raisins 
  • 200g white chocolate chips 
  • 1 tsp coconut oil 
  • Holly decorations

Method
  • Line two baking trays with baking paper - this is where you'll place your ready rolled balls
  • Weigh out your digestives, place into a sandwich bag and crush with a rolling pin until in small chunks then set aside in a large bowl
  • Place dark chocolate chips in a glass bowl and heat over a saucepan of hot water until melted
  • Add the butter and golden syrup and mix until smooth
  • Take your bowl of crushed digestives, add the raisins and then pour over the melted chocolate mix and combine
  • Using your hands, roll tablespoons of mixture into balls (the mixture makes 25-30) then place on to the prepared baking trays to place in the fridge to chill for ten minutes 
  • While the balls chill, add your chocolate chips and coconut oil to a glass bowl and heat over a saucepan of hot water until melted
  • Remove balls from fridge and drizzle white chocolate over each ball to create a Christmas pudding icing effect followed by your holly decorations 
  • Place back in the fridge to set and you're finished!


The tiffin balls really take no time at all to make and it's the perfect weekend activity for all ages. We're planning on making some more next week for home made Christmas gifts for friends and might experiment with adding some more Christmassy flavour in too!
